Chef: Chef Torsten Schulz originally hails from Saxony, Germany and received his formal culinary education at the Hotelfachschule – Villingen, Germany. He apprenticed for three years at the Restaurant Old Chancellery Stuttgart, Germany in classical French and German cuisine. Chef Schulz has held positions at every level of the culinary spectrum throughout Europe, the far east and the United States. He was instrumental in the opening of Georgio Armani’s NOBU in Milan, Italy and sustained a Michelin star rating as the Executive Chef of Restaurant Sao Gabriel – Almancil, Algarve, Portugal for three consecutive years. Chef Schulz owns a sustainable urban agricultural business, enjoys photography, cars and cooking. He is married with two children.
Owner: Michael Bruno served as an infantry officer in the Marines for twenty years with specialties of Infantry, Manpower Management and Foreign Area Officer. Michael initially became interested in baking at an early age and began to consider his hobby as a possible career choice. He attended the Pastry Arts Program at the L’academie de Cuisine in Washignton D.C. and subsequently moved back to his home in Ohio to open a small bakery in 2009. This has now become The Blue Door Cafe. Michael is fluent in German and holds a Master of Science in Management from The Naval Postgraduate School in Monterey. He enjoys cars, exercise, and baking.
