That's where Michael's twenty years of experience leading an infantry team of US Marines lends itself to guiding his crew of passionate young cooks and bakers. That's why The Blue Door can do things like make its own English Muffins and doesn't need a freezer to pre make dishes - they have the skills to pull off the tasks that would overwhelm most kitchen crews.
